Food Service
All of our products can be manufactured in food service quantities and formats. This not only foregoes the branded packaging — reducing costs — but is more convenient for storage and commercial use in general.
For food service, all of our flavoured butters are provided as standard in a 2kg tub. We can also accommodate 2kg, 5kg and 10kg bricks. Our XO sauces and roasting fats are provided in a 2L tub, and our truffle oils are provided in a 1L jar.

Butter FAQs
What is the shelf life of Sublime Butter?
When created for export, our butter is frozen and Julian date coded. Assuming that frozen cold chain storage is maintained, we will underwrite one year of frozen shelf life. Once tempered, we advise 12 weeks of chilled shelf life. This is the responsibility of the local distributor.
Does Sublime Butter contain any additives?
No. We are proud to say that our butter contains absolutely nothing artificial, nor does it contain any additives, fillers or stabilisers that might compromise the integrity of the product.
Does Sublime Butter contain any allergens?
Apart from the obvious (milk), our core range of butters contains no allergens whatsoever. The XO contains scallops (shellfish) and soybeans (soy).
Is Sublime Butter suitable for vegetarians?
All of our core flavours are suitable for vegetarians, with the exception of No. 12 — Truffle, Parmesan & Black Pepper. The parmesan element in this product contains animal rennet.
How do you use Sublime Butter?
In lots of ways! It's great on toast, crumpets and English muffins — or sandwiches for that matter. You can add it to soups, sauces, pasta and scrambled eggs to benefit from Sublime's beautiful flavours and glossiness. Perhaps most iconically, you can rest Sublime Butter on top of a steak when serving for instant deliciousness. This also works perfectly with chicken, fish, pork and even vegetables.
Can you create custom flavours?
Yes. Assuming there is sufficient volume, we can work together to make any flavour you’d like. We bring a wide range of product development expertise to these endeavours, and we’ll be delighted to bring your idea to life.
Does Sublime Butter come in any other format than the retail rolls?
Yes. In addition to our 90g retail rolls, all of our flavoured butter can be purchased as an unbranded 2kg tub for food service. Additionally, if the volume is sufficient, we may be able to pursue custom formats such as individually wrapped servings. Not to mention our new 1kg patisserie slabs!
Creations FAQs
What is an XO sauce?
Our XO is an intricately prepared chilli sauce featuring Hokkaido scallops, fried pork, chillies and other aromats. The cooked ingredients are stored in rapeseed oil, for a textural, flavourful experience that needs to be tasted to be believed.
How does XO sauce vary from a regular chilli sauce?
A Western-style chilli sauce uses chillies as a base, and it is these chillies that are the main medium for the sauce — usually in combination with vinegar, tomatoes or some other offsetting ingredient. An XO actually uses protein as a base, and chilli infused oil as a medium — for a completely different eating experience.
How is Sublime's XO Sauce made?
That’s a proprietary secret! What we can tell you is that we use no MSG or other artificial ingredients.
Why doesn't Sublime use MSG?
MSG is a widely-used shortcut for adding an (often superficial) umami element to food. We can achieve a far deeper, more authentic umami by creating the right protein profiles in our recipes. What’s more, we believe that the fewer ultra-processed ingredients we eat, the better; not using MSG feels more on-brand to us philosophically.
Is The Other XO truly vegan?
It absolutely is. It is also totally gluten- and allergen-free.
Why did you create The Other XO?
Necessity is the mother of invention! Our MD Tony’s wife, who was vegan at the time, requested an XO style chilli sauce that she was able to eat. After waking up at 4am with an epiphany as to how to do it, The Other XO was born.
What do you use an XO sauce for?
Add it to just about anything that could benefit from a well-rounded savoury hit. Rice, noodles, sandwiches, eggs — you name it.
Can I only cook roast potatoes and Yorkshire puddings with the Roasting Fat?
While our Better Roasting Fat is designed for the ultimate roast potatoes and Yorkies, you can also use it to confit your favourite proteins and vegetables, and even use it as a fat for frying and searing
