The Very First of Its Kind
About five years ago, we elected to transform Sublime into the Ridiculous. Many of you will know — and look forward to — our yearly reveal for just how Ridiculous we might go next. But we would be remiss not to remind ourselves of this special range's not-so-humble beginnings. With No. 76: a rare flavour that we have, after much deliberation, decided to bring back permanently into the Ridiculous offer.
A Cheeseboard in One Bite
Like the fabled three-course chewing gum from Willy Wonka's fantastical factory, we discovered with No. 76 an uncanny ability to capture everything in the most essential of formats. The slick, fatty, meatiness of specially selected bone marrow guarantees the success of this flavourful fare; for umami is not an afterthought, as it so often is, but planned dutifully and well in advance. Thus, No. 76 is powerful and rich. But this richness is never allowed to run away.
Our favourite Stichelton blue contributes its characteristic salty bitterness to ground things, deftly, and there we have our backdrop. This duo of complementary flavours is brought alive, last but not least, by a whisper of sweet Madeira. You could see these components separately as part of a fine-dining cheeseboard or sharing platter. We have chosen to combine them in our award-winning butter.
