When it comes to pushing the envelope, Sublime’s pedigree is unmatched. Every last ingredient in No. 11 is there on purpose, with a starring role to play on the palate. Lemon sings loud thanks to its acidic vibrancy. This is expertly balanced with the organic brininess of the caper berries, which, in support of the lemon’s high notes add complexity and savouriness in the middle. Underpinning this duo, dill provides florality and a complementary citric herbaceousness that’s light, grassy and undeniably harmonious.

Chicken, such as it is, is omni-compatible with our butters, and this is no different for No. 11. This is true also of pork chops, for example, whose inherent fattiness and mild-mannered flavour are underscored by the zing of lemon and twang of caper. But it is undoubtedly the world of seafood that stands to gain the most from the arrival of our latest butter. Take cod or halibut — firm of flesh, gentle of aroma — and oh so welcoming to this particular trio of ingredients.
